FROM THE WINERY...
"Summer in Sonoma Valley is synonymous with warm and dry weather, vineyards bursting with greenery and the first purple hues of verasion as the bright green berries begin to ripen. At Three Sticks Wines’ historic Adobe tasting room, just off the square in downtown Sonoma, LeCordon-Bleu trained Chef Oscar Bendeck embraces the excitement of the season by offering guests an exquisite experience designed to delight one’s senses. Through this private educational food and wine pairing, guests discover how Chef’s unique dishes enhance the key characteristics of Three Sticks' coveted Chardonnays and Pinot Noirs.
We invite you to experience the exuberance of the season with the vibrant 2021 One Sky Sonoma Mountain Chardonnay ($70) paired with Chef’s very own Charred Eggplant Mousse (recipe below). Bright and luscious at the same time, this special Chardonnay is aged in French oak, offering an elegant caramel finish—the perfect complement to the rich, earthy, smokiness of the dish. The bright acidity of the wine cuts through the creaminess of the eggplant, highlighting a marriage of delicious textures. The finish on the wine and the eggplant linger together, enticing one for another sip and bite!"
