If you were investing your money in a Texas Hill Country restaurant that showcased the bounty of the region's local ingredients wouldn't you be moved by the fact that there are over 70 wineries there? That they win medals every year at the toughest wine competitions on the west coast and east? The restaurant below isn't. It went with whiskey and called itself Whiskey Ridge.

Since they are in Driftwood I suggest they walk over to Fall CreekVineyards tasting room and try the "Salt Lick Vineyards" Tempranillo for which the grapes were grown closer to the restaurant than any whiskey distillery on their list.

"The new concept from the team behind Austin's Cover 3 is bringing a fresh perspective to Texas Hill Country dining. Led by Chef Steve Warner, the menu features innovative takes on classic Texas dishes with Texas meats and Gulf Coast seafood cooked over a coal fire grill.

Chicken Fried Ribeye with hand-cut aged R-C Ranch wagyu topped with scratch-made gravy
6hr Braised Beef Short Rib with jalapeño cheese grits, finished with a molasses guajillo glaze
Steaks and chops from the wood-burning grill: 22oz Bone-in Cowboy Ribeye, 14oz Wagyu New york Strip, 12oz Center Cut Filet, 28oz Double Cut Pork Chop, 8oz Yellowfin Tuna Steak, and 8oz Atlantic Salmon Filet
Double Trouble Wagyu Burger with two patties, applewood smoked bacon, sweet onion, b&b pickles, horseradish dijonnaise

The beverage program is equally ambitious, featuring one of the area's most extensive collections of rare bourbons and small-batch whiskeys. It's a haven for whiskey enthusiasts seeking unique and hard-to-find selections, presented by Buffalo Trace Certified staff. The cocktail menu showcases Texas spirits in creative ways, including a Frozen Old Fashioned made with Still Austin bourbon and the Hill Country Hospitality featuring Socorro Reposado tequila and prickly pear.
The 6,000-square-foot space embraces its Hill Country setting with an open-concept design, incorporating local materials like Texas limestone and custom Swift River pecan wood tables. The kitchen is equipped with a wood-fired grill where steaks – all cut in-house – are cooked over an open flame. Their wrap-around porch is the perfect place for a drink, to take in the Hill Country views and a gorgeous sunset. The restaurant is located at 8750 W. RR 150, Building 300, at the corner of FM 150 and FM 3237. They're open for dinner daily, and Friday lunch. "
