WINE REVIEW: Hess Lion Tamer 2018 Cabernet Sauvignon, Napa, CA ($65)

High altitude vineyards . A proportion of malbec added to the blend. They make this a distinctive wine. The winemaker’s notes suggest pairing with grilled ribeye with steak fries and chimichurri. I happened to be back in town after a trip and found myself at a local Thai restaurant. As a result, my pairing was Tom Ka Soup -- and it worked!


Appearance: Ruby, blackcurrant. Opaque core, thinning at edge;


Nose: Herbal, earthy, forest floor, cocoa,


Taste: Ripe raspberry, tannins have a nice sharp edge, fruit explodes in the mouth. Ten minutes aeration has helped.
