CHICKEN CAULIFLOWER from Rōti!

It seems like only yesterday that Rōti, the fast casual restaurant with locations in Uptown and Preston Center and delivery all over the place, had wowed me with the quality of their ingredients and the care in their preparation. Infact, it was! And they did it again today as part of a media event.
The Chicken Cauliflower is roti chicken cooked succulent in the centre and then tanned with a char for a flavor hit in a bowl with cauliflower rice and cucumber, marinated cabbage, creamy, earthy feta, tart pepperoncini peppers, garlic, and green s’hug sauce. The best point is how succulent the chicken is. Like someone brined it before adding the sear. Such a pleasant find in a world where everyone is jumping on the popularity of chicken with less thought about how to give it a chef’s touch with texture and flavor.
This is definitely one to repeat. Thanks to all the folks at Rōti at Olive and McKinney in Dallas who prepared my lunch, well done!
