Preston Center has a new chef-driven po’boy shop, called The PoBoy Shop, and I recommend you check it out!
Chef-driven po’boy shop? Isn’t that like saying a chef-driven sandwich shop? Well, yes, but with the knowledge that all the meat is house-prepared, even the salami, bologna, and pastrami. The bread comes from Langlinais Baking Company, in Lafayette. The owner and chef is Evan Meagher, who founded Evan’s Meta Market in The Shops of Highland Park, so he knows what he is doing with meats. In fact, he began offering po’boys as a sideline at the meat market and their popularity was such that they started to take over the space. Hence, the dedicated sandwich shop a few miles away.

The second concept from Shops Hospitality Group brings vibrant Louisiana flavors and Texas flair to the sandwich scene. Inspired by the ‘Tex-Ajun’ flavors that made Evan’s Meat Market a neighborhood favorite, The PoBoy Shop gives the iconic Louisiana sandwich a bold new twist. It’s rooted in tradition, crafted with care, and served with a generous helping of Southern hospitality, all in a bright, welcoming space designed for today’s appetites.
Founded by Lafayette native Evan Meagher, The PoBoy Shop was born from overwhelming demand. What started as a lunch special at Evan’s Meat Market quickly became a fan-favorite, prompting Meagher to create a full-fledged, community-driven concept that celebrates the flavor and craftsmanship of traditional Louisiana po’boys.
“There’s something powerful about taking what you grew up on and sharing it in a new way,” says Meagher. “Louisiana has such a deep history with the po’boy, and this is my way of bringing that heritage forward, updated with a little Texas edge and a lot of passion.”
What sets a true po’boy apart is the bread, and The PoBoy Shop sources it directly from Langlinais Baking Company in Lafayette, the same bakery where Meagher held his first job. For Meagher, it’s more than just a supplier; it’s a personal connection to his roots and a way to bring a true taste of Louisiana to Dallas. Each sandwich starts with this signature loaf and is piled high with premium house-prepared meats from Evan’s Meat Market, finished with scratch-made sauces and fresh fixings for maximum flavor.

Signature hot po’boy offerings include:
Fried Shrimp – Crispy, golden-fried shrimp piled high on fresh French bread, with lettuce, tomato, onion, and a kick of Cajun mayo — bold, perfect, and unapologetically delicious
Fried Bologna – Griddled all-beef bologna topped with melted cheddar, fresh tomato, and a swipe of yellow mustard for a bold and unpretentious update of a childhood favorite
Chicken Cracklins – Fried chicken bites balanced by onion, tomato, and a ribbon of Cajun mayo

Cold po’boy options allow guests to build their own combinations with a variety of fixings –vegetables, cheese, sauces, and deli meat sources from Evan’s Meat Market: turkey, ham, all-beef bologna, salami, roast beef, and pastrami.
Patrons will also spot the second most famous Cajun sandwich making its debut on the menu. Hailing from the heart of Louisiana, the iconic Muffuletta is a bold, flavor-packed creation that blends Italian ingredients with Cajun spirit. The PoBoy Shop’s version stays true to tradition, stacking house-made ham, all-beef bologna, and salami with provolone, a custom giardiniera of pickled carrots, cauliflower, onion, and celery, plus chopped olives, all served on a 9-inch round loaf from the legendary Langlinais Bakery. It’s a proud homage to the sandwich that comes second only to the po’boy.

The open kitchen invites guests to watch the craftsmanship behind each po’boy and salad, while flexible seating options, including four indoor tables, four additional patio tables, and convenient take-out service, cater to both dine-in regulars and guests on the go. The PoBoy Shop officially opens to the public on Monday, July 7, with soft opening hours from 10:30 a.m. to 3:00 p.m. daily through July 13.
