I wanted to share a last-minute cocktail to enjoy from Tequila Corralejo that’s as spirited as the holiday itself.

 

The Paleta Perfecta combines fresh fruit juice, citrus, and a handcrafted mini paleta for a festive drink that’s great for entertaining. It’s playful, photogenic, and deeply rooted in heritage, made with tequila from one of Mexico’s oldest distilleries.

 

But this isn’t just a refreshing cocktail. Behind it is Tequila Corralejo, a legacy brand with over 250 years of tequila-making tradition. Produced at Hacienda Corralejo, a national landmark and the birthplace of Don Miguel Hidalgo y Costilla, leader of the Mexican War of Independence, it was the first estate in Mexico to produce tequila commercially.

 

Unlike most tequilas made in Jalisco, Tequila Corralejo is distilled in Guanajuato, giving it a unique character. It’s made with 100% estate-grown blue weber agave using traditional methods passed down through generations. Paleta Perfecta

 

Ingredients:

  • 2 oz Tequila Corralejo Reposado

  • 1 oz fresh lime juice

  • 0.5 oz agave nectar

  • 2 oz fresh fruit juice (hibiscus, pineapple, or watermelon recommended)

  • Mini fruit paleta (lime, hibiscus, or pineapple)

  • Tajín or chili-lime salt (for rim)

  • Garnish: Citrus wheel + mint sprig

 

Method:

Rim a highball glass with Tajín and fill with ice. In a shaker, combine tequila, fruit juice, lime juice, and agave nectar. Shake well, pour into the glass, and garnish with a mini paleta, citrus wheel, and mint sprig.
