WINE REVIEW: Billecart-Salmon Champagne Brut 2006 ‘Cuvée Nicolas Francois’, France ($164)

One of the most prestigious houses in Champagne made this impressive wine that could age for many more years. While thought of as the wine of celebration, Champagne is drunk throughout the meal in France. This would be an excellent choice.


Appearance: Light gold color. Lively bead with tiny bubbles;


Nose: Brioche, yeast, lemons;


Palate: Formidable phenolic grip. Green apples. Shows the harmonious resolution of almost 15 years of ageing.
